Sausage Casings - Twine - Sausage Clips

There are several options in casings for sausage. The most popular and probably the most acceptable are the hog casings. The casing itself is relatively tough so that it won't break easily when stuffing, and yet it is not really noticeable when eating the sausage. The size is acceptable in the 30 to 35mm range for commercial processors and those who stuff sausage on a regular basis. Sausage casings are also a great solution for dry sausage. This particular size of dry sausage is good for meals away from home while traveling, hunting or fishing since it is more filling than the dry sausages being made from the smaller sheep casings or collagen casings.
Probably the next most recognized and used casings are sheep casingmost notably in the 20 - 23mm size. It is most commonly used to make breakfast sausage with links about the size of a finger. It's difficult to understand why that's the case; however, it is easy to understand why sheep casings are used to make dry sausage or snack sticks. The reason why sheep casings are used for dry sausage is that they dry very quickly.
Sheep casings show their value in hot-humid locations such as the southern half of the United States. It is well known that there aren't many consecutive days of low humidity or cold temperatures. Therefore, using sheep casings insures you that the dried sausage will not mildew before it dehydrates out sufficiently. Click here for interesting information on sheep casings. If you are concerned about it drying quickly there is a trick in finishing the drying job. Sausage that has not finished drying can be placed in the refrigerator. If it is a self-defrosting refrigerator (and most likely it is) it will dry out very well. A self-defrosting refrigerator is a humidity pump. The coils accumulate frost some of which is moisture from your sausage. When the refrigerator goes into defrost the frost is melted and it drains out of the refrigerator. Then the coils accumulate more frost again to start the process all over again.

Interesting Info about Sheep Casings for Sausage Making

Sheep casing, sausage sheep casing, or sausage sheep skin is the outer layer material that encloses the filling of the sausage. "Meat processors use casings to give sausages their shape. Most sausages are cylindrical, but can come in other forms." There are natural and artificial casings. Sheep casing is one of several different natural casings.

It is often assumed that sausages were invented by the Sumerians in the region that is Iraq today, around 4000 BC. However there are references to a cooked meat product stuffed in a goat stomach, like what we now commonly call sausage described as a recipe in the world's oldest cookbook 3,750 years ago. The Chinese sausage lācháng, which consists of goat and lamb meat, was first mentioned in 589 BC. The Greek poet Homer mentioned a kind of blood sausage in his Odyssey (book 20, poem 25); Epicharmus (ca. 550 BC - ca. 460 BC) wrote a comedy entitled The Sausage. The American Science Association notes that there are three main types of casings: "natural, artificial (cellulose), and reconstituted collagen (fibrous)" Heinsohn's carries all three and has natural sheep casings and hog casings.
