There are several options in casings for sausage. The most popular and probably the most acceptable is the hog casing. It is relatively tough so that it won't break easily when stuffing and yet it is not really noticeable when eating the sausage. The size is really pretty acceptable in the 30 to 35mm range since it fits into the mouth rather easily. Sausage casings are also relatively popular for dry sausage. This size dry sausage is good for meals away from home while traveliing or hunting or fishing since it is more filling than the dry sausages made from the smaller sheep or collagen casings.
Probably the next most popular is the sheep casing in the 20 - 23mm size. It is most popularly used to make breakfast sausage with links about the size of a finger. Why this is popular, I don't really understand but I do understand the second most popular use of sheep casings. They are used to make dry sausage or snack sticks. The reason sheep casings are popular for dry sausage is that they dry very quickly. This is really important in the southern half of the United States because there are not many consecutive days of low humidity and cold temperatures so that the dry sausage will not mildew before it drys sufficiently. There is another trick in finishing the drying job and it is the most obvious thing that you can do with sausage that has not finished drying - put it in the refrigerator. If it is a self-defrosting refrigerator and most likely it is, it will dry out very well. A self-defrosting refrigerator is a humidity pump. The coils accumulate frost some of which is moisture from your sausage. When the refrigerator goes into defrost, the frost is melted and it drains out of the refrigerator. The coils accumulate more frost. Over and over again.
