There's a lot of latitude here. I've heard of Mustang grape wine with anywhere from 2 to 3 lbs of sugar per gallon of wine. So that you can duplicate this wine again - it is suggested that you kill any wild yeast with 1.5 crushed campden tablets per gallon.

These esters bring fresh, floral armoas to neutral varieties or high-yield grapes. Among the high ester producers, Lalvin ICV K1-V1116 is the most resistant to difficult fermentation conditions such as low turbidity, low temperature, and low fatty acid content. Lalvin ICV K1-V1116 is a proven strain for the fermentation of ice wines. It can also be used for rosé or red wines.

Helps break down fruit prior to fermentation and aids in clarifying. Increases juice yields and color by breaking down the cellular structure. Also eliminates pectin haze from wines made from pectin rich fruit.
Add 1/2 Teaspoon to gallon of juice, or 1/10 teaspoon per pound of fruit, one hour before start of fermentation.
Now is the time to insert an air lock. The rubber stopper shown below fits most carboys and the airlock fits inside it. Don't forget to add water or some liquid to the air lock. (Some folks use vodka for sterility) The airlock is important to preserve the integrity of the wine so that the domestic yeast maintains control. Any infiltration of foreign bodies may just leave you a carboy of vinegar. Sterility will be very important from here on out.

After about 30 days, the fermenting should be finished. You will want to let the wine try to clear naturally but you will likely have to rack it at least once.
