2 lbs. Snapping turtle meat, trimmed and cut into 1-inch cubes 4 cups seeded chopped tomatoes 4 1/4 cups water, divided 1 cup chopped onions 1/2 teaspoon salt 1/2 teaspoon dried thyme leaves 1/4 teaspoon dried rosemary leaves 1/4 teaspoon pepper 1/4 teaspoon ground nutmeg 1/8 teaspoon ground cloves 1 Tablespoon lemon juice 2 Tablespoons All-Purpose Flour 1/2 cup snipped fresh parsley 1/4 cup dry sherry
In 6-quart Dutch oven or stockpot, combine turtle meat, tomatoes, 4 cups water, the onions, salt, thyme, rosemary, pepper, nutmeg, cloves, and lemon juice. In small bowl, combine flour and remaining 1/4 cup water. Blend until smooth. Add to stew, stirring constantly, until mixture thickens and bubbles. Just before serving, stir in parsley and sherry.
